This pleasantly aromatic fleshy, 100% wild harvested, wildcrafted mushroom shines like an exotic golden flower when seen from a distance against the autumn forest background. Also known as "golden chanterelle" and "egg mushroom." chanterelles have a magical appeal for most culinary experts in Europe, United States, and Asia. They are prized for their playful shape, warm color, and subtle flavor—a balance of fruity, peppery, and gently earthy. Chanterelles are excellent with meats, fish, or as an entree topping. They're also very popular with eggs or as a filling in crêpes.

 

100% wild harvested in the pristine forests and mountains of western Maine, USA.

To reconstitute, simply soak them in warm water for 30 minutes or add them to a recipe with simmering liquids in the last 10-15 minutes.

BLACK TRUMPETS

100% wildcrafted in Maine, USA. Smoky, earthy taste and a sweet aroma.

 

Reconstitute with hot water for use in dishes (soup risotto, omelets, fish, pasta, soup, stir fry and a variety of other gourmet and common recipes). Excellent replacement for meat in vegetarian diets. Can also be crushed for use as a spice. There are excellent recipes online that use black trumpets, widely considered a culinary delight.

Please note that some settling of dehydrated matsutake occurs during shipping. You will probably notice what appear to be a small amount of "crumbs" at the bottom of the bag when your shipment arrives, similar to the bottom of a box of cereal.

CHICKEN OF THE WOODS

Dried Chicken of the Woods mushrooms are best suited as a flavoring for cooked applications. Unlike other mushrooms that can be reconstituted whole, Chicken of the Woods mushrooms develop a tough, generally unsuitable texture when rehydrated. We therefore sell only Chicken of the Woods powder.

 

Dried Chicken of the Woods powder is excellent in creamy dishes and sauces as a flavoring or binder. The powder can be stirred into soups, stews, and curries, or combined into gravies, sauces for roasted meats, casseroles, and risotto. Dried Chicken of the Woods mushroom powder can also be mixed with spices to create a savory meat rub, used with salt as an earthy seasoning, or incorporated as a stock base for ramen, chicken, or cream soups.
